MASAKAN UMMI : GERMAN APPLE PANCAKE

GERMAN APPLE PANCAKE

Serves 2 to 4
Prep Time: 8 minutes
Total Time: 28 Minutes

Bahan bahan :

3 large eggs, room temperature
¾ cup whole milk, room temperature
¾ cup all-purpose flour
3 tablespoons granulated sugar
4 tablespoons butter, divided
¾ teaspoon cinnamon
1 large Granny Smith apple, peeled, sliced ¼-inch thick
1 tablespoon brown sugar
Confectioners’ sugar

Cara Penyediaan :
a)     Preheat the oven to 425 degrees Fahrenheit (218 degrees Celsius).
b)     In a medium bowl, whisk together the eggs, milk, flour and sugar until smooth.
c)     In a 10-inch cast iron skillet over medium heat, melt the butter. Add the apple slices and sprinkle with the brown sugar and cinnamon. Cook for about 5 minutes, frequently tossing, until the apples are coated and have softened. Transfer to a dish.
d)     Wipe the skillet with a paper towel and place in the preheated oven for about 8 to 10 minutes, until very hot.
e)     Add the remaining butter to the skillet, swirling to coat the bottom and sides. Add the cooked apples to the center of the pan and pour the batter on top.
f)      Bake for 18 to 20 minutes, until the pancake has puffed and the edges are golden brown. The center should be set but custardy.
g)     Sprinkle with the confectioners’ sugar and serve immediately.

CINNAMON ROLL PANCAKES

Serves 8 – 10
Prep Time: 10 Minutes
Total Time: 30 Minutes

BAHAN BAHAN

1.       Pancake batter:
2.     1½ cups all-purpose flour
3.     1 Tablespoon baking powder
4.    3 Tablespoons granulated sugar
5.     ¼ teaspoon salt
6.     1 egg
7.     1 cup milk
8.     1 teaspoon pure vanilla extract
9.     Cinnamon Filling:
10.  6 Tablespoons unsalted butter, melted
11.     ¾ cup brown sugar, packed
12.  1½ Tablespoons ground cinnamon
13.  Cream Cheese Glaze:
14.  ¼ cup unsalted butter, room temperature
15.  2 ounces cream cheese, room temperature
16.  ¾ cup powdered sugar
17.   ½ teaspoon pure vanilla extract
18.  2-3 Tablespoons milk

CARA PENYEDIAAN :

a)     Make the pancake batter: in a medium bowl, whisk together the flour, baking powder, sugar, and salt. Add the egg, milk, and vanilla, extract and mix until the batter is fully blended.
b)     Make the cinnamon swirl filling: in a small bowl, combine the melted butter, brown sugar and cinnamon. Mix well. Transfer the mixture to a quart-sized resealable plastic bag and set it aside.
c)     Make the cream cheese glaze: In a medium bowl, beat together the butter and cream cheese until the mixture is smooth and creamy. Add the powdered sugar and vanilla, and continue to beat until it’s fully mixed and no lumps remain. Add enough milk to thin the glaze to your desired consistency, and set it aside.
d)     Preheat a large skillet or griddle to medium-low heat. Spray the preheated griddle with pan spray, and wipe away any excess. Pour ½ cup of the pancake batter onto the prepared griddle.
e)     Twist the top of the bag containing the cinnamon filling to force the filling into one corner of the bag and remove any trapped air. Then snip the corner of the bag to create a small hole, and squeeze the bag to pipe a swirl of the cinnamon filling onto the center of each pancake.
f)      When the batter begins to bubble, the pancake is ready to be flipped. Flip the pancake and cook it for an additional 1-2 minutes, or until the bottom side is golden brown. Keep the pancakes warm in a low oven or on a plate covered with aluminum foil while preparing the remaining pancakes.
g)     Drizzle the cream cheese glaze over the warm pancakes and serve.

PINEAPPLE UPSIDE DOWN PANCAKES

Serves 5 to 6
Prep Time: 10 minutes
Total Time: 30 minutes

BAHAN BAHAN :
–½ cup butter, divided (¼ cup melted)
–½ cup brown sugar
–1 – 20-ounce can pineapple slices
–2-½ cups all-purpose flour
–2 tablespoons baking powder
–2 tablespoons baking soda
–¼ teaspoon kosher salt
–2-½ cups whole milk
–½ cup granulated sugar
–¼ teaspoon pure vanilla extract
–Maraschino cherries

CARA PENYEDIAAN :
a)     Preheat a griddle to 350 degrees Fahrenheit (175 degrees Celsius).
b)     In a large sauté pan over medium heat, melt ¼ cup butter and the brown sugar. Add the pineapple rings and cook until caramelized.
c)     In a large mixing bowl, combine the flour, baking powder, baking soda and salt together.
d)     In a small bowl, combine and mix the milk, granulated sugar and vanilla extract.
e)     Add the wet ingredients to the dry and mix until just-combined and no lumps remain. Add the other ¼ cup melted butter and mix well.
f)      Lightly grease the preheated griddle and wipe away any excess oil. Using a -cup measuring cup, portion out pancake batter onto the hot griddle. Place a pineapple ring in the center of the batter, press down gently, and add a Maraschino cherry to the center of each ring.
g)     Allow the pancakes to cook until bubbles form along the top of the batter. Flip and cook the other side until pancakes are golden brown and cooked inside.

h)     Serve pineapple side-up and drizzle with the remaining brown-sugar glaze.

MASAKAN UMMI : PENKEK NUTELLA

Serves 7 to 8
Prep Time: 10 minutes
Total Time: 30 minutes

Ingredients : 
·        10 to 14 tablespoons Nutella®
PENKEK
1.       1-½ cups all-purpose flour
2.     3 tablespoons granulated sugar
3.     1 tablespoon baking powder
4.    ¼ teaspoon kosher salt
5.     1 egg
6.     1 teaspoon pure vanilla extract
7.     1 cup milk

CARA MEMASAK : 

a)     Line a sheet pan with parchment paper.
b)     Spoon 1-½ tablespoons of Nutella® onto the prepared pan. Spread it out into a round disc about 2-½ inches in diameter.
c)     Repeat, making 7 to 8 Nutella® discs. Place the pan in the freezer for 15 to 20 minutes, or until the Nutella® discs are firm and hold their shape.
d)     Preheat a large skillet or griddle to medium-low heat.
e)     In a medium bowl, whisk together the flour, sugar, baking powder and salt. Add the egg, vanilla extract and milk.
f)      Mix the pancake batter until fully blended.
g)     Spray the preheated griddle with pan spray, and wipe away excess.
h)     Pour ¼ cup of the pancake batter on the prepared griddle. Place 1 frozen Nutella® disc into the center of the batter.
i)       Top the Nutella® disc with enough batter to cover completely. When the batter begins to bubble the pancake is ready to be flipped.
j)      Flip and cook the pancake for an additional 1 to 2 minutes, or until the other side is golden brown.

k)     Keep the completed pancakes warm while preparing the remaining pancakes. Serve warm.

MASAKAN UMMI : AYAM BUTTERMILK

Masa Penyediaan: 10 minit 
Memasak: 15 minit 
Keseluruhan: 25 minit
Jumlah Hidangan : 5 orang

Bahan-Bahan:
1.     2 ketul besar ayam, bahagian dada
2.    1/2 tin susu cair
3.    3 ulas bawang putih, hiris halus
4.    1/2 biji bawang besar holland atau bawang besar biasa, potong dadu
5.    4 sudu besar mentega
6.    2 tangkai daun kari
7.    4 biji cili padi
8.    Bahan-bahan untuk tepung salutan ayam:
9.    2-3 sudu besar tepung gandum
10.   1 sudu besar serbuk kari
11.    1 biji telur
12.   Sedikit garam
13.   Air secukupnya

Cara Penyediaan:
·         Potong dadu isi ayam, bersihkan dan toskan airnya.
·         Masukkan telur dan garam ke atas ayam dan gaulkan sebati.
·         Masukkan tepung, serbuk kari dan sedikit air. Kacau supaya tepung pekat dan menyaluti ayam. Perap selama 30 minit atau lebih.
·         Goreng ayam di dalam minyak panas sehingga garing. Angkat dan ketepikan.
·         Cara-cara untuk ayam buttermilk:
·         Dalam kuali, panaskan butter sehingga cair dan tumis bawang putih, cili dan daun kari sehingga naik bau.
·         Masukkan susu cair dan bawang besar. Kemudian masukkan ayam yang digoreng tadi.
·         Masak sehingga kuah sedikit pekat. Perasakan dengan garam dan gula secukupnya.


Tips

Kalau tak mahu pedas, jangan masukkan cili. Dan kalau anda mahu cara yang mudah dan cepat untuk penyediaan ayam goreng, boleh juga gunakan tepung goreng serbaguna yang sedia ada di pasaran.

MASAKAN UMMI : AYAM PANDAN THAI ISTIMEWA

Jumlah Hidangan :
Bahan-Bahan:
1.    1/2 ekor ayam, potong kecil kepada kiub 1.5 inci setiap satu
2.    1 sudu besar serbuk ketumbar
3.    1 sudu besar serbuk jintan manis
4.    1/2-1 sudu besar serbuk cili (boleh ganti dengan 1 sudu besar cilikisar)
5.    2 sudu besar sos tiram
6.    2 sudu besar kicap cair (boleh ganti dengan 1 sudu besar kicap pekat)
7.    sedikit garam
8.    daun pandan saiz besar secukupnya
9.    bilah pencucuk gigi secukupnya
10.  Bahan-bahan tumbuk halus:
11.   4-5 biji bawang merah
12.   3 ulas bawang putih
13.   2 inci halia
14.   1 ketul kunyit hidup

Cara Penyediaan:
·         Bersihkan ayam toskan seketika.
·         Gaulkan ayam bersama bahan-bahan tumbuk halus dan juga bahan-bahan lain (kecuali daun pandan dan bilah pencucuk gigi). Perap ayam selama minimum 1/2 jam.
·         Balut ketulan ayam dengan sehelai daun pandan seperti cara membalut ketupat. Tidak perlu terlalu rapat dan ada ruang sedikit. Cucuk dengan bilah pencungkil gigi atau lidi untuk mengelakan dari daun terbuka.
·         Goreng di dalam minyak panas sehingga masak. Angkat dan hidangkan bersama sos cili Thai dan nasi panas.
Tips
Kicap cair sudah masin rasanya, jadi anda harus hati-hati jika meletak garam supaya tidak terlebih masin.
Jika tiada kunyit hidup, boleh gantikan dengan serbuk kunyit.

Bahan-bahan pula sekadar anggaran dan anda boleh agak untuk melebihkan atau mengurangkan sesetengah bahan
